
Authentic Chimichurri
A true taste of Uruguay, this chimichurri transforms grilled meats and vegetables into something unforgettable.
Ingredients
½ cup Wildly Virgin olive oil
- 2 Tbsp red wine vinegar
½ cup finely chopped parsley
- 2 Tbsp finely chopped fresh oregano (you can sub with 1 Tbsp dried oregano)
- 2-3 cloves garlic, minced
- 1 red chili, deseeded and finely chopped (or not deseeded if you want it spicier)
- 1 tsp coarse salt
- ¼ tsp pepper
Directions
- Combine all ingredients in a bowl and mix well. Let the chimichurri sit for at least 5–10 minutes to allow the flavors to meld. For best results, let it rest for 2 hours or more.
Notes
You can make it ahead of time—chimichurri keeps well in the fridge for a couple of days.
