Authentic Chimichurri

Authentic Chimichurri

A true taste of Uruguay, this chimichurri transforms grilled meats and vegetables into something unforgettable.

Ingredients

  • ½ cup Wildly Virgin olive oil

  • 2 Tbsp red wine vinegar
  • ½ cup finely chopped parsley

  • 2 Tbsp finely chopped fresh oregano (you can sub with 1 Tbsp dried oregano)
  • 2-3 cloves garlic, minced
  • 1 red chili, deseeded and finely chopped (or not deseeded if you want it spicier)
  • 1 tsp coarse salt
  • ¼ tsp pepper

Directions

  1. Combine all ingredients in a bowl and mix well. Let the chimichurri sit for at least 5–10 minutes to allow the flavors to meld. For best results, let it rest for 2 hours or more.

Notes

You can make it ahead of time—chimichurri keeps well in the fridge for a couple of days.
