Cauliflower Steak with Hummus & Chimichurri

Ingredients

    Hummus For the Chimichurri For the Cauliflower Steaks
    • 1 large cauliflower, sliced lengthwise into 1 inch steaks

    • Wildly Virgin Olive Oil

    • Sweet paprika
    • Smoked paprika
    • Salt and pepper

    Directions

      Cauliflower Steaks
      1. Brush both sides of the cauliflower slices with olive oil mixed with sweet paprika, smoked paprika, salt, and pepper.
      2. Grill for a few minutes on each side until golden and tender.

      To Serve
      1. Spoon a generous layer of hummus onto each plate, top with grilled cauliflower steaks, and finish with a spoonful of chimichurri. Drizzle with a bit more Wildly Virgin olive oil before serving.
