Roasted Cherry Tomatoes w/ Goat Cheese
There is nothing better than roasted tomatoes with creamy goat cheese, spread on crusty bread
Ingredients
Big bunch of cherry tomatoes (40-50)
2-3 garlic cloves
Rosemary and/or thyme
Wildly Virgin Extra Virgin Olive Oil
Salt and pepper
Log of goat cheese, sliced or crumbled
Directions
Preheat the oven to 450F (230C). Place the tomatoes in an oven proof pan and drizzle with olive oil and salt and pepper generously. Smash the garlic and add to the pan along with the herbs.
Roast for about 30 minutes stirring half way through. There should be a little bit of charring.
Take out of the oven and mix the goat cheese in. Drizzle a little more olive oil on top.
Spread on to some crusty bread and enjoy!
