Salt Baked Fish
As beautiful and impressive as it is delicious, baking an entire fish in salt is easier than it appears.
Ingredients
2 lbs sea bass (or other flaky white fish)
4 lbs salt!
2 cloves garlic
2 egg whites
Few sprigs of thyme
Few sprigs of rosemary
Wildly Virgin Olive Oil
1 lemon
1 lb sweet potatoes
2 cloves of garlic
Wildly Virgin olive oil
Salt and black pepper
1 teaspoon nutmeg
Directions
Preheat the oven to 350ºF. Wash the sea bass and pat dry.
Mix the salt with the egg whites until you get a wet mixture.
Cover the bottom of a baking tray with the salt mixture and place the fish on top with the sliced lemon, two crushed garlic cloves, and herbs placed inside. Cover completely with the remaining salt to prevent air from getting in. Bake for about 45 minutes.
While the fish is cooking cut the potatoes into wedges and crush two garlic cloves. Mix well with olive oil, salt and pepper and place on a baking tray.
Bake on a separate rack in the oven for 30 minutes or until the potato is very soft.
Mash the potato with a potato masher, season with nutmeg and chopped parsley and mix everything very well.
To serve the sea bass, tap the salt with the back of a knife and remove the salt from the fish with a spoon.
Serve the sea bass with mashed sweet potatoes. Drizzle with Wildly Virgin olive oil to taste.
