
Simple Creamy Hummus
This simple hummus recipe, takes minutes to make and produces a silky smooth authentic treat.
Ingredients
1 15-ounce jar chickpeas (not drained)
- 2-3 cloves garlic (depending on how garlicky you prefer it)
½ cup tahini
Juice of 1 lemon
- 1 tsp sea salt
2 Tbsp Wildly Virgin Olive Oil
Optional Toppings: sumac, zaatar
Directions
Microwave undrained chickpeas and whole garlic cloves in a bowl for 4-5 minutes. This step is key to softening the skin. Alternatively you can boil them for 5 minutes with a teaspoon of baking soda.
Let it sit for 5 mins or so to cool down.
Add the chickpeas and garlic to a blender or food processor and process with lemon juice, salt and tahini. Stream in olive oil while mixing.
Notes
Tastes best after its been in the fridge for a few hours and the flavors have blended. When serving give it another drizzle of Wildly Virgin and optionally top with sumac, chickpeas and or zaatar.
