The Quest for Perfection: Meet Joaquim's Reserve Cobrançosa

Most people see olive oil as just another ingredient. We see it as the main event.

So we asked ourselves: What does true perfection in olive oil look like? Then we set out to create something that could steal the spotlight—bold, intense, and unmistakably Portuguese.

The Perfect Olive: Cobrançosa

Our pursuit of the perfect olive oil led us to Cobrançosa—one of Portugal’s most vibrant and intense native olives.

For thousands of years, varieties like Galega, Verdeal, and Cobrançosa have been cultivated across Portugal. But Cobrançosa, in particular, has deep roots in the rugged Trás-os-Montes region, where it thrives in cold, wet conditions and limestone-rich soil.

Famously temperamental, Cobrançosa can go an entire season without bearing fruit. It tests the patience and devotion of even the most skilled farmers. That’s why so many have abandoned it, replacing these ancient trees with non-native, higher-yield, machine harvestable varietals like Picual.

So why do some persevere with this finicky olive? Because the olive oil it produces is unlike any other. An intense spicy flavor is balanced with a strong fruity aroma with touches of fresh grass and ripe fruit.

The Perfect Producer: Joaquim Moreira

Enter master miller Joaquim Moreira, steward of an ancient grove of precious Cobrançosa trees in their native Trás-os-Montes. Joaquim has several olive groves, all 100% certified organic, but this olive oil came from the grove with his oldest trees, each hundreds of years old.

Each week from late September through late October, Joaquim harvested olives and meticulously crafted fresh batches of olive oil. Our co-founder, Nader, carefully tasted every batch, searching for that singular, exceptional quality.  

Each batch had something unique—early harvests were spicier and more intense, while later ones softened, losing a bit of their edge.

The batch we selected, harvested on October 16th, 2024, struck the perfect balance. Bold yet aromatic, with just the right fruitiness and fire. One taste, and we were speechless.

 

Wrapped in Portuguese Cork

To honor this exceptional olive oil and celebrate its Portuguese heritage, we've collaborated with a local cork producer to create an unforgettable cork enclosure. 

Portugal is the world's leading producer of cork, accounting for over 60% of global supply. Harvested sustainably, cork is a renewable resource obtained without felling trees; instead, the bark is carefully stripped every 9 years, allowing the trees to continue thriving for centuries. By choosing cork, we embrace a material that embodies sustainability, tradition, and the natural beauty of Portugal.

The Result: Joaquim's Reserve Cobrançosa
